Prestigious arabica bequeathed by the Mayan Indians of the Altiplano in Guatemala, Maya Ixil is cultivated in altitude on very small plantations. The planters use a compost made from fruit pulp and manure and weed it by hand. No chemical fertilizers and pesticides are used. Despite this, they get very good productivity.
Within democratically organized committees, the members themselves decide the future of their cooperative. The Fairtrade premiums made it possible to fight effectively against the rust of the coffee tree which had destroyed a large part of the crops.
